With the arrival of warmer weather I have been craving ice cold fruit smoothies (minus the dairy!). This little number has become my favourite so far!
The best bit about this recipe is that by using the cashews you are still able to have a creamy tasting smoothie but it is dairy free with an added bonus of protein. Sometimes I will also add a few spinach or kale leaves but keep in mind if you do this the smoothie will no longer be pink but will still taste amazing!
This recipe makes 1 litre so if you have any leftover you can either pop in the fridge for later or create healthy frozen fruit ice blocks by pouring into molds.
What you need:
½ cup frozen or fresh strawberries
½ cup cashews
1.5 frozen bananas
4-6 ice cubes
1 litre of water
What you need to do:
Pop all ingredients into a high powered blender and blend until smooth.
Serve and enjoy.
Note: If your blender is not very strong I recommend soaking your cashews for two hours prior to blending.
