So we recently celebrated my hubby’s birthday and here’s what I made for his yummy cake.
This birthday cake is completely raw, gluten and dairy free, and all the sugars are natural.
What you will need:
Cupcake silicon moulds
For the base:
12 medjool dates
150g almond flour
4 tablespoons coconut oil
For the filling:
4 tablespoons maple syrup
2 small ripe avocados (if you have large avocados just use 1)
2 tablespoons cacao

What you need to do:
To make the base –
- Blend the ingredients for the base in your Thermomix or food processor to make a cookie-dough texture.
- Divide mixture between 10 silicone cups/moulds and press down firmly – It should fill approximately a third of the cup.
To make the filling –
- Blend the ingredients
- Put large spoonful of filling onto each base to fill the mould, press down and smooth over.
Top with frozen berries to make it look pretty as well as delicious!
Put in the freezer for a few hours.
And in the morning (or whenever you are ready) simply pop out of the molds (this is really easy when frozen) and present on a cake stand or plate.
