Introducing my new favourite breaky- Quinoa porridge.
This is super simple to make and really easy to upgrade to a super food feast, what a great way to start the day!
What you will need:
2 cup of quinoa
1 cup of coconut milk
1/2 cup of frozen berries
1 tablespoon of honey
1 tablespoon of unhulled tahini
Goji berries and chia seeds to sprinkle on top
Fill up a pot with water.
Add quinoa to pot and boil for roughly 15 minutes or until soft (tip: I usually boil a large amount of the quinoa and use it over a few days )
Once quinoa is cooked drain the water out of the pot.
Add coconut milk and frozen berries to the pot of cooked quinoa and simmer on a low heat until the berries are cooked making sure to stir the contents to make sure it does not stick to the bottom.
Pour into a bowl.
Top with chopped banana, goji berries and chia seeds, dollop on a tablespoon of tahini and drizzle honey on top.
Serve and enjoy!
